Haven’t worked out a full meal plan yet, but have been busy prepping lots of little bits to get us started for the week. Here’s what I have on hand so far:
- Romaine, chopped and ready for salads
- Kale, finely chopped
- Roasted beets (chiogga and golden)
- Sesame soba noodles, portioned for quick snacks and simply seasoned for addition to veggie bowls
- Caesar salad dressing
- Lemon vinaigrette
- Boiled eggs
- Sliced carrots
- Refried black beans
- Tomato and mozzarella salad
- Sweet potato waffles
- Red pepper sauce
- Roasted cauliflower
