prepping for the week

Haven’t worked out a full meal plan yet, but have been busy prepping lots of little bits to get us started for the week. Here’s what I have on hand so far:

  • Romaine, chopped and ready for salads
  • Kale, finely chopped
  • Roasted beets (chiogga and golden)
  • Sesame soba noodles, portioned for quick snacks and simply seasoned for addition to veggie bowls
  • Caesar salad dressing
  • Lemon vinaigrette
  • Boiled eggs
  • Sliced carrots
  • Refried black beans
  • Tomato and mozzarella salad
  • Sweet potato waffles
  • Red pepper sauce
  • Roasted cauliflower
