We hurdled the I-don’t-know-how-many days of consecutive over-100° days, the last of summer, the start of classes for the 14yo, and a birthday that ticked her up to an official fifteen years of age. I am feeling super-nostalgic and sappy these days and bracing myself for the whirlwind of activity that the fall will bring. I’ll be using the humble sheet pan to help me with quick meals this week and sticking to easy weekday meals for our first full week of classes and activities.
We have managed to cook at home for every meal so far this month and I am trying to see how far I can get before turning to takeout.
Tuesday – leftovers
Wednesday – Spaghetti + Caesar Salads
Thursday – Picadillo Tacos + Side Salads with Lime/Cumin Vinaigrette
Friday – Summer Veggie Burgers + Roasted Okra
Saturday – Bowls: Roasted Veggies + Grain + Protein + Greens + Dressing TBD
Snacks will consist of lots of fresh cut fruit, pumpkin bread, some popsicles and trays of roasted veggies.
