mid-september meal plan

I began this week with a simple goal: no mid-week pizza.


  • Summer Veggie Enchiladas + Rice + Beans
  • Eggplant Parmesan
  • Tostada Night + Fideos
  • Soba Noodles with Spicy Peanut Sauce
  • Veggie Lo Mein
  • Minestrone + Romaine Salads
  • Tamales


  • Zucchini Bread
  • Roasted Beets
  • Pineapple-Banana Popsicles

It is now Tuesday post-lunch and I am realizing that I didn’t get enough weekend prep in to pull this off (gracefully) so I am off to soak beans and chop veggies and hope that leftovers will help pull it all together. Wish me luck!
