It has taken me darned near 20 years to figure out how to stir-fry a noodle without turning it to mush or goo. Took the help of an old favorite (Madhur Jaffrey’s World of the East Vegetarian Cooking) to break me of my well-cememted habits and to try what I have perhaps known all along – stir-frying noodles and veggies separately makes all the difference. We’ve have been enjoying LOTS of stir-fried noodles lately as I practice.
