what we’re eating this week

We just wrapped a near perfect birthday weekend that was filled with loads of family time and yummy eats. And now… we have a week of very normal stuff (meetings and tax prep and labs and classes and all the other stuff that fills the in betweens). Got a jump start on food by prepping a batch of pink beans, raw veggies, and roasted beets. Broad strokes for a week’s worth of meals below:

  • BBQ Beans
  • Cauliflower Gratin
  • Olive & Caper Soy Curl Tacos
  • Homemade Ravioli
  • Mediterranean Bowls
  • Lentil Salads
  • Broccoli & Tofu Green Curry

This weekend’s CSA greens (kale, dandelion, chard), broccoli, garlic, and onions will hopefully help fill out the menu.
