friday night dinner

We pickup our CSA on Saturday mornings at the farmer’s market which sometimes makes for skinny vegetable offerings on Friday evenings. This bit of spinach is getting some help from oven-roasted tomatoes and whole wheat spaghetti (thank you pantry). I’ve also started keeping a couple of bags of frozen veggies on hand. A bag of cauliflower, transferred to a tray will take a quick roast in the oven with olive oil and some panko bread crumbs to round out tonight’s offerings.
