This last day of the weekend has become a kitchen placeholder. I prep as much as I can for the coming week and do my best to undo the hectic feel of the past week by pulling together meals that replenish our palettes (6 days of quick meals are usually repeats) and reawaken our love of veggies and fresh eats. Today I use some broccoli and mushrooms that I had on hand for this recipe from 101 Cookbooks which is still one of my go-tos when I have to finish off ingredients or zap some new flavor into our ruts.
