Today’s lunch bowl felt like a victory and an exercise in muscle memory. Like… I know how to do this. I know how to make yummy, homemade, good for ya’ meals! I know how to turn a grain and a legume into a meal with the help of a couple of CSA veggies (carrots and mixed greens in this instance)! So ta-da! I remembered how to do this and it was so satisfying.
Today’s bowl was a riff on a Salad Samurai favorite and done mostly from memory. I already had cooked chickpeas on hand so turning them into BBQ chickpeas just required a skillet, some oil, and a couple of tablespoons of BBQ sauce. Alternatively, you could toss these in the oven and roast at 375° for a bit more crunch factor in your bowl.
