new year coming at ya

I’ve had food on the brain a lot lately which is saying something if you know how much time and energy I normally spend on food. It shall come as no surprise to hear that the 20-yo is the source of my preoccupation. She has some big changes coming up – graduating from college, grad school and living on her own – and this has me swirling about her ability to take care of herself. Have we prepped her enough? Is she ready to live on her own? Will she be able to exit the building if there is a fire?

Rather then spin out in endless what-ifs, I am of course focusing on her ability to feed herself. She can make basics – eggs, pasta, quick plates of nachos, and a tortilla casserole but her real sweet spot is warming up mama’s leftovers. The things she loves to eat extend beyond her basic repertoire so kitchen lessons on her favorites have already begun.

The goal is to have a stack of recipes for components (grains, legumes, vegetables, proteins, sauces) that she can combine into meals and to practice some of her favorite dishes from beginning to end. This kiddo is going to be testing out all my meal planning and cooking tricks to see if they really are as accessible and easy as I like to think they are.

I am ear-deep in meal-making strategy and this exercise may be just the kick I needed to get some of my projects (book/meal-planner/series) off the ground.
