Today I realized I had not put pen to paper and had no meal plan. I winged it through my birthday weekend, then came Monday where I was laser-focused on a singular pot of beans (that took an eternity to cook on the stove), Tuesday I made soup from the leftover beans, and when I turned to my meal planner for guidance on Wednesday… it was blank. Gah.
Beans on day one and soup on day two is a great example of meal planning muscle kicking into action, but in a week where I am swimming in work and life and grief… a plan for the greens will give me a tiny slice of certainty:
- Chard and steam-fried eggs for breakfast
- Mushrooms and kale in cream sauce with pasta
- Cold noodle salads in sesame sauce with lettuce
- Collard fried-rice
- Cauliflower dice with finely shredded broccoli greens (at least I think that is what they are)
