
A birthday celebration around here doesn’t feel quite right without at least one home-cooked meal. I’m pretty sure that’s why his birthday felt so rushed and incomplete a few days ago. Luckily, we were able to turn work off for the weekend and have a handful of quiet days at home to celebrate. The slower pace of the weekend also meant that our daughter was able to help make the birthday pie.
Saturday
Breakfast/Lunch – Egg, Potato & Cheese Tacos
Birthday Dessert – Pumpkin Pie
Dinner – Vegetarian Pho
Sunday
Breakfast – Buttermilk Pancakes
Dinner – Taco Salads with Avocado Lime Vinaigrette & Roasted Pepitas
We’ll are hoping that we can take a queue from this past weekend to slow down a bit and spend more time hunkered down at home together.
