meal plan – january 9, 2012

It’s been forever since I put together a solid meal plan and thought that it was finally time. We’ve been eating stuff from the quick-and-easy roster for weeks and I think both the family and I are ready for some variety. My lack of planning is also starting to show in our fridge and pantry’s lack of depth – bread/no peanut butter, beans/no tortillas, milk/no cereal. Heading to the grocery store to stock the pantry. Most of the produces is already living in the fridge.

Meals:
Split Pea Soup with Spinach
Classic Veggie Sandwiches | Rutabaga Oven Fries | Classic Slaw
Sopes  | Arroz Negro | Fresh Veggies in Lime Vinaigrette
Eggrolls | Sesame Peanut Noodle Salad
Lemon Risotto | Collards 
White Bean & Pasta Soup with Sage | Field Roast Sausages

Breakfast:
Black Bean & Potato Breakfast Tacos
Honey Banana Sunshine Muffins & Grapefruits
Almond-Vanilla Granola & Yogurt with Strawberries
Brown Sugar and Banana Oatmeal
Migas & Refried Pinto Beans

Other Stuff:
Oat Bread
Shredded Kohlrabi Quick Pickle

P.S. I keep trying to write a post about the holidays and finally realized that I’ve been struggling ’cause it was no big whoop ’round here. We had some great downtime together, enjoyed being unplugged (even if only for bits) and were lucky enough to have some great weather mixed in there to enjoy the outdoors. The entire household is ready to get back into the swing of things and we are really looking forward to 2012 together as I turn 37, our (mine and his) life together hits the 10 year mark, and she experiences the world in her taller, 8yo skin.
