I like to have 4-5 meals thought through for the week. This usually leaves me plenty of wiggle room for last-minute inspiration and my weekend cooking which is a little less rushed and (I like to think) from the heart. It’s been two weeks since my last meal plan ’cause I went a little crazy last time with a whopping 8 meals in the queue, 4 of which needed spinach. Ay ay ay. I made it through that list just yesterday. 😉
This week’s is a little less ambitious.
Meals:
Mozzarella Sandwiches with Sun-dried Tomato Pesto
Grilled Broccoli Stir Fry | Rice Paper Rolls*
Chard & White Bean Stew | Broccoli-Cheddar Quiche**
Avocado Salads with Grapefruit Vinaigrette
Spinach Omelets | Roasted Root Veggies
Fideos
Other Stuff:
Acai Berry Smoothies
Roasted Beets
Walnut Pecan Pate (variation on this)
Whole Wheat Applesauce Muffins
Chewy Chocolate Chip Cookies
* Nigella Fresh
** Salad People
I’m on the same! Should be fun being CSA twinsies since you’ll likely cook up something totally different than me with the same produce. Hmm… seems like eating from CSA would be a really cool collaborative project if we had some more bloggers!
I do CSA and love my bi-weekly schedule. Makes the prospect of making it through a whole box of veggies less daunting and leaves me bare enough on week 2 that I can go to the farmer’s market and purchase a thing or two without it being wasteful.
It’s fun to read your plan now that we are rocking the same ingredients. Do you shop at the market, or do you have a CSA too? I just got my first CSA box. I’ve used my chard, my salad greens, 1/2 my broccoli, and one orange. Still have to use my spinach, grapefruit, brussel sprout greens, scallions, and 1/2 a bunch of broccoli. Phew!
