meal plan – april 25, 2012

Hello there!

I’ve been MIA for nearly a month, but I assure you that much cooking has been happening ’round here. Actually, I’m pretty impressed with the fam right now. We’ve all been swamped with work and life and fun and plans and work, but have still managed to eat nearly every meal together. A few work-related lunches and post-soccer empty stomachs being the only exceptions.

I had to let go of a few things to make it happen and variety was at the top of the list. Fancy came next. Luckily the busy stint was somewhat temporary and I now have a bit more breathing room. Deep exhale.

I’m hoping to get more of these in the queue for the weeks to come:

Black Beans & Rice
Kale & Quinoa Salad
Enchilada Sauce

Ancho Lentil Stew
Buttered Crouton Salad with Avocado (veggie version of this)
Spinach-Ricotta Shells

Snacks and Stuff
Carrot Muffins
Chocolate Chip Cookies (for a soccer game)
Strawberry-Vanilla Popsicles

I’m bringing the 35mm out of hibernation, too. Let’s see what comes of all that.
