About time for a recipe round-up, I say. Seems like we have lots of eggplant the past few weeks and I’m sure many of you with CSA boxes are in the same boat. Eggplant has never been one to get me all riled up so I’m working a little harder this year to embrace the veggie and find the love. These are helping so far. Have not quite reached the love stage with eggplant, but stoked to be using it so much more frequently in our meals week to week.
