cooking from dinner: changing the game

 

And just like that it is Monday. We have an exciting week ahead of us at el castillo and are feeling energized by all the talks and readings from this past weekend’s Texas Book Festival. Stopped by our neighborhood library on the way home to pick up some holds and my copy of Melissa Clark’s Dinner: Changing the Game was finally there! Pleasantly surprised by the how much vegetarian faire is included and trying out a handful of recipes that at first glance seem very manageable with what I have on hand:

  • Japanese Omelet with Edamame Rice
  • Stovetop Mac and Cheese (of course)
  • Fusilli & Roasted Cauliflower with Capers
  • Crispy Tofu with Ginger & Spicy Greens
  • Roasted Cauliflower Salad

Had him pick up a head of cauliflower so we could polish off the last of the Cashew Curry Dressing from Julia Turshen’s latest book and the rest will be just regular ol’ stuffs – grain bowls, quick salads, and just in case you don’t know me well enough yet… there will be beans.
