I skipped a CSA pickup this weekend, so my meal plan probably won’t come together ‘til I stroll threw the produce section at the grocery store tomorrow. Things I do know:
- I have plenty of grains and beans on hand to fill out meals.
- I have whole wheat pita that I baked over the weekend for “sandwiches” and quick pita-pizzas.
- Frozen spinach deserves a medal. It cooks up gloriously in a little olive oil and has already helped make a meal from nothing this weekend.
- There will be enchiladas of some kind.
