June is for putting up tomatoes and this June is no different in spite of the vastly different world that exists beyond the front door of our house. I am going to attempt to put up 60 pounds of tomatoes this year and I am well under way with about 20 lbs on the shelves and in the freezer. This is what I have planned so far:
- Pizza sauce
- Enchilada sauce
- Oven-roasted tomatoes
- Crushed tomatoes
- Crushed tomatoes with basil
- Salsa
There has been a huge change in tide with regards to homemade ketchup lately. The 16yo has jumped ship to Heinz due its extremely not-tomato taste (bah!), so if I do make some it will be a micro-batch of a spicy ketchup for D and I.

I am also going to try to be better about the bits that get leftover this year. Skins are gonna get dehydrated (for real this time) and I think I am going to reserve all the liquid that that comes out of my roasted tomatoes. I can see it working really well in risottos or light soups that just need a little tomato-zing without actually adding tomatoes.
