There are still tomatoes to be eaten, but my annual #tomatolandia adventure is done. I’ll do an official inventory later this weekend but I put up all our faves:
- Crushed tomatoes
- Roasted tomatoes
- Pizza sauce
- Enchilada sauce
- Hot sauce
- Eggplant-tomato purée
This last jar of oven roasted tomatoes was not water-bathed so tomorrow I will decide if I want to make a tomato soup or a minestrone or one last batch of something special to save for the winter when they’ll be appreciated.
