I’ve been sick for a few days and finally have my energy back so off to the kitchen I go! We have some other stuff (very belated gift shopping, food deliveries, birthday parties, and maybe a basketball game) this weekend so I spent the greater portion of tonight getting some basic ingredients ready.
I chopped veggies for omelets and the one soup I am making this weekend. Got greens portioned up into salads. Got black beans, chickpeas and vegetable broth cooked, cooled and stored in fridge and I roasted a big batch of cauliflower. Pancake mix portions… well, we have one ready.
It sounds like an insane amount of food already, but at least some of the soup and salad is getting delivered to a friend in need.
