The busy part of March is here. There are good and bad parts of the busy and there is a fair share of the stressful bits this year as well. Spring Break and SXSW start next week so I am in a mad dash to get all my things done before my mini-vacation at the film festival. I tried to fill this week’s meal plan with some family favorites – Navy Beans with Sage and Sausage (veggie, of course) and Macaroni and Cheese. I’m hoping that these small concessions will make them more tolerant of my lacks next week when I am parked at movie theaters.
This week also marks the week that I give up on Friday and Saturday. We have been S-T-U-P-I-D busy on the weekends because of soccer season (our first) and I have not been able to get a decent meal together for dinner on Friday or lunch on Saturday. So I surrender to the land of restaurants for Friday night with the slow-cooker doing the heavy lifting for me for Saturday.

Tuesday – White Beans with Sage & Field Roast Sausages | Spinach Salads
Wednesday – Oven-Baked Macaroni & Cheese | Classic Veggie Sandwiches
Thursday – Swiss Chard, Garlic & Parsley Soup | Crusty Bread
Friday – Dinner Out
Saturday – Fancy Tacos | Rice | Beans
Sundays have become a wing-it day. It’s actually been kind a fun to not plan something for my only lazy day of the week. We usually finish off leftovers and at some point I raid the fridge and pantry for must-be-cooked-now items and figure something out. Yesterday’s wing-it session yielded a glorious Kadai Masala with red peppers and cauliflower. I’ll let you know what this week’s session bears.
