recipe: chipotle-honey granola

CHIPOTLE-HONEY GRANOLA
1 1/2 cups of oats
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/4 cup raw peanuts
1/4 cup slivered or roughly chopped almonds
1/4 cup of honey
2 tablespoons of oil
1/2 teaspoon pureed chipotle *

Toss all the dry ingredients together and place on a rimmed baking sheet that has been lined with parchment paper.
Plop it into a 300º oven for about 10 minutes till everything is warmed through.
Mix the honey, oil and pureed chipotle till fairly smooth.
Pour honey mixture over your warmed oats and toss till coated.
Put your baking sheet back in the oven and bake until your oats look golden brown (15-20 minutes).

The sweet and crunch of the granola is balanced nicely with just a tiny bit of heat. We like to sprinkle the granola over a bowl of honey-sweetened yogurt, but I imagine it would be yummy with some fresh fruit and almond milk, too.

* I usually have a small jar of this stuff on hand – pureeing a can of chipotle peppers in adobo and keeping it on hand in the fridge makes it easy to add bits of heat to your food.
