loquat season is in full swing

My neighbor’s tree gave us some of the best loquats that I’ve ever tasted last year and I have been anxiously awaiting for the fruit to turn its perfect golden color. Yesterday was the day! First picking yielded about 5 lbs of fruit. We usually eat through the fruit stash but I am considering putting a little bit of it up for later in the year. Butter or fruit leather? Seems like it could add some nice tang to a barbecue sauce, too.
