vegetarian meal plan – january 12, 2014

I’ve come to the slow realization that my daughter is much more disciplined than I am. She’s one of those kids that makes her bed in the morning and that is acutely aware of the time of the day and how much time she has left until “the next thing.” She is also (even in spite of herself) very much a kid that sometimes just doesn’t dig what’s for dinner. She doesn’t mind beets and greens so much, but squash, red peppers, sweet potatoes and chickpeas are not her friends. She’s learned through much trial and error that complaining doesn’t clear her plate of the unwanted things and now copes very differently with things she does not like. Restraint is her friend at the dinner table, which in this instance means that she saves her favorite things on the plate for last. She gets the less than pleasing parts of her meal out of the way so that she can end on a good note (and flavor in her mouth).

I am taking cues from her habits this week in hopes of ending on a good note as well… cooking first the things that I normally put off. The collards have already been ribboned and blanched and subbed for spinach in a batch of lasagna. Next up, the sweet potatoes will meet some yeast for weekday bread. The rest of the meals in this week’s menu can come together in a matter of 30-45 minutes if you put a plan in place for your beans (slow cooker or pressure cooker) and rice (make it before you get your curry going so it cooks while you work).
