Sometimes, you just have to take a break from the water bath canning. These beauts are tucked in the back of the fridge. Ratios for the brine are in Hip Girl’s Guide to the Kitchen, where you can also learn oodles of simple tricks for preserving your garden/CSA stash.

  1. I love making fridge pickles and also use Kate’s ratios. Anytime I have left over red onion, radishes, cauliflower, or carrots, I’ll make a batch. They are so crisp and divine! I’ve experimented with different vinegars and they’ve all come out great.

    • I should really be better about pickling year-round. I do my summer pickling and tend to forget about all those other awesome seasons – cauliflower, carrots, and oh my god… radishes would be awesome!
