summer CSA
It is a glorious time to be eating the fruits (and veggies) of local farmers. We ended up going a solid month (maybe longer) with out our CSA box and are so damned happy to have it back. Feeling inspired by all the colors and variety and cooking up a storm this week:
- Eggplant and Ginger over Rice*
- Tomato Soup with Lemongrass**
- Suburban Chicago Deep Dish Rigatoni***
- Lemongrass Tofu Bowls
- Summer Squash Migas
- Garlicky Kohlrabi Relish
- Habanero Sauce (canned for the pantry)
- Soyrizo con Papa Scrambles
Have lots of papas and summer squash and beets. Will more thank likely just roast them all up in pans for throwing in buddha bowls or for snacking.
