I spent a good part of my Sunday working on a meal plan for the week. It had been a while so I had cookbooks out and lots and lots of plans! Grilled salads, grilled i nigiri, enchiladas, chili… Then, our grocery order came in with four pounds of broccoli florets (FOUR POUNDS!!) instead of the two heads that I had ordered for a single meal. So now I am in eat-all-the-broccoli mode. We had a broccoli and cheddar scramble this morning and our week has pivoted to broccoli every day. A few of my fave broccoli recipes below:
