I’ll preface this post by saying that I heart my daughter’s love of cooking. Allowing her full access to the kitchen means that she knows what it takes to get a full and healthy meal on the table. The whining at the table has subsided ’cause she knows firsthand how hard her mama works in the kitchen.
And yes, she still complains about not liking some things (tomatoes are not her friends). And yes, I sometimes have to push her to try new things, but it is becoming less and less.
I’ll be posting more on her kitchen adventures from time to time. She takes on one meal a week. When in school, it’s usually a weekend breakfast or lunch. This morning she made me breakfast. Yogurt Pancakes from Mollie Katzen’s Honest Pretzels (recipe below).
I can’t gush about these cookbooks enough. The recipes are not icky “kid” food and definitely tasty enough to please adult palettes (veggie or not). There are three of them: Pretend Soup, Salad People and Honest Pretzels. The latter is for kids 8-up and has slightly longer recipes, but the first two are awesome and can really give your little one a sense of independence.
Yogurt Pancakes
Source: Mollie Katzen’s Honest Pretzels
1 cup unbleached white flour
1/2 tsp salt
1 tsp baking powder
1 tbsp butter, melted
1 cup flavored yogurt (your favorite)
1/2 cup milk
1 egg
Directions
1. Sift first three ingredients together in a bowl.
2. Melt your butter.
3. Mix remaining ingredients well with a whisk.
4. Add wet to dry and combine well with wooden spoon.
5. Adult can cook pancakes in skillet over medium heat.
