for dinner this week

It has been nearly two weeks since I last planned a week’s worth of food. We had so much leftover food that last week was a bunch of leftovers and creative re-dos. I’m gonna keep it lighter. This week’s menu is a quick and easy one:

Mixed Vegetables over Greens with Mustard Vinaigrette
Chana Masala (smitten kitchen’s)
Black Bean Tacos with Lime/Cumin Slaw and Queso Fresco
Vegetable Soup – still tracking down a recipe that fulfills the cravings
Stir Fry & Tangy Soba Noodle Salad

We have a few baked goods planned for the week to help round out breakfast and lunches – popovers and oatmeal bread. Complete configurations for the two earlier meals of the day are still in the works. Have a good week!
