meal plan – june 5, 2012

Just a quick jot down of this week. My daughter has two days of school left (including today) and then we will kick off our summer with a solid day or two of sleeping in, pajamas and good ol’ nothing. We’ll be planning for next week’s Week-O-Fun in between all the lounging and nothing. I am hoping that there is lots to post about – picnics, snacks on the go and family-cooked meals.

In the meantime, here’s a look at a super-easy vegetarian meal plan for weeks when you want to save your precious energy for fun stuff:

Leftovers
Baked Potatoes
Black Beans
Grilled Corn
Green Beans

Meals
Quesadillas | Black Beans | Saffron Rice | Cuke Salad
Hearty Lentil Stew | Spinach Quiche
Tomato Soup | Garlicky Green Beans | BLTs (Tofu Fakon)
Ravioli | Side Salads

Other Stuff
Carrots & Hummus
Blueberry Muffin Smoothie
Banilla Yogurt Popsicles
Banana Oat Muffins

The Banilla yogurt smoothies are a total guilty pleasure. I should measure how many ounces of liquid each popsicle mold holds, but I am guessing that it isn’t more than 3-4 tablespoons of the yogurt. Not too bad a portion of something uber-sweet, I figure.
