We are celebrating the arrival of apples this week! I was lucky enough to get my hands on a decent-sized batch of seconds from Top of Texas and am taking full advantage of these beauts. I even delayed my first citrus order of the season! My first batch of pink applesauce went into the processor tonight and I am looking forward to the ease of apples in lunch boxes and some crispy bites ahead of the incredibly long citrus season that we have ahead of us.

Dinner & Lunches
Split Pea Soup | Spinach, Apple & Walnut Salads
Apple & Cheese Sandwiches on Wheat

Breakfast
Overnight Steel Cut Oats with Applesauce & Cinnamon
Black Bean & Sweet Potato Tacos
Spinach & Tomato & Feta Omelette
Yogurt with Apple-Cinnamon Granola

Snacks
Whole Wheat Applesauce Muffins
Fresh Squeezed Apple Juice
Carrot, Celery & Apple Juice
Smart Cookies*

Most of our shelf-stable applesauce is reserved for baking as it does wonders in cutting down sugar content. What do you like to do with apples?

P.S. I’ll be figuring out the rest of the week when I pick up our CSA box on Wednesday.

i’ve never tried a bread pudding before, but your other question i can answer… the recipe is from Honest Pretzels by Mollie Katzen. It’s one of my daughter’s favorite “cookies,” sweetened with apple juice and packed with oats and almond butter. 🙂

where do you find almond butter? Are these cookies actually good for kids? What nutrition does it provide? How do I make these cookies gluten free?

hi allison, you can find almond butter near the peanut butter at grocery stores. if your markets don’t carry it, try a local health food store. as for nutritional value and gluten-free adaptations… that would be totally out of my area of expertise.
