This week’s salad has us in smiles with all its bright colors. All the veggies came straight from my CSA share so it’s oozing seasonal goodness as well. We dressed it with a spritz of toasted sesame oil and a store-bought cashew tamari dressing from Wheatsville that is to die for.
Soba Noodle and Roasted Sweet Potato Salad
- Soba noodles
- Red cabbage, shredded
- Baked tofu, in cubes
- Roasted sweet potatoes (I used this recipe and it was a hit)
- Raw carrots
- Toasted sesame oil
- Sesame seeds
- Cashew tamari dressing
Other fun add-ins: toasted peanuts, green onions, edamame, citrus, or sub a citrus-vinaigrette.
