another one for the beach | weekend getaway menu

We are off to the beach to celebrate our daughter’s birthday in a couple of days so we have lots of packing and prepping on the mind. There are bathing suits, sand-related “stuff”, books, kites, binoculars, more books, games and all sorts of other knick-knacks that have the beach stash growing.

The only thing left to grapple with is the food! Vegetarian restaurants in Corpus Christi are hard to come by. Eating out will be an adventure that will most likely end in cheese and sides of veggies. So… our hotel room fridge and microwave are going to work overtime to help us round-out our diets for the weekend.

Everything will require prep and packing in advance with the exception of the one microwave-cooked meal. I picked most of the stuff below, because its easy to make and even easier to portion out into single servings.

For dinner and lunch:
Microwave “Baked” Potatoes | Steamed Broccoli with Lemon & Garlic
Spinach Salads with Pear, Walnuts, Feta & Balsamic Vinaigrette
Lentil & Roasted Red Pepper Salad in Lime-Cumin Vinaigrette
Black Olive Hummus & Veggies & Pitas
Rice and Beans To-Go
For breakfast:
Yogurt and Homemade Granola
Half-Batch of Muffins
Lots of Yummy Fruit

Wish me luck! I only have two more days to pull all this food together!
