Adjusting to the quantities in my medium box and trying to figure out how many meals this will get me through. In today’s box: beets, carrots, broccoli, radishes, fennel, parsley, salad mix, kale, and spinach. Also still working my way through a ginormous stash of butternut and sweet potato.

Goodness! I still have mountains of summer squash around! I don’t usually struggle too much with what to make (it can be shredded and put in everything from migas to risotto to baked things), but I do start getting a bit bored by my usual rotation by… you know… OCTOBER.
